Food Technology

Year 9

 In Year 9 students begin their AQA Design and Technology: Food Technology GCSE course. The course helps students develop their creativity, with making of food products a vital feature of their experience of taking this specification. This two unit specification requires students to develop their application of knowledge and understanding when developing ideas, planning, producing products and evaluating them. This course has 60% controlled assessment in order to recognise the importance of practical work within this subject.

During term 1 students will learn how to describe, explain and compare the factors that influence food choices. They will undertake research about Italian food and be able to describe the food culture in Italy and they will use this knowledge to evaluate the use of typical Italian ingredients in the use of food preparation.

Students will learn about sustainability in the food industry and understand how we can make our products more sustainable.

During term 2 students will learn about the functions of ingredients. They will use this knowledge when researching and making biscuits and cakes using a variety of methods. Students will research how baked products can be modified to suite different dietary needs and design products to suite the dietary needs they have learned about.

During term 3 students will learn about the different ways of making pastry. They will be able to apply their knowledge of functions of ingredients to make pastry in a number of different ways. In researching and making a variety of pastry products students will be able to identify common faults found in pastry making and suggest ways to avoid/ overcome these faults.

Year 10

In Year 10 students continue their AQA Design and Technology: Food Technology GCSE course. The course helps students develop their creativity, with making of food products a vital feature of their experience of taking this specification. This two unit specification requires students to develop their application of knowledge and understanding when developing ideas, planning, producing products and evaluating them. This course has 60% controlled assessment in order to recognise the importance of practical work within this subject.

During term 1 students will learn about the design and make task. They will complete a task analysis, menu and supermarket research, and a questionnaire. They will analyse their research and findings to write a design criteria. Students will focus on researching their design and make task. They will research information about a particular type of food or product. This will help students to respond to their design task.

During term 2 students will use their research to create initial ideas of food products related to their chosen context. For their research students will include their prior knowledge of nutrition; consider their target market; be aware of social and moral factors affecting the production of their designs. From their initial design ideas students will make their products testing out their ingredients that are used for each food design. Students will write an evaluation for each food product ensuring that facts of nutrition; sensory analysis and social and moral factors have been considered as well as how the product was made using visuals (photographs). From this research students will choose a final idea for development.

During term 3 students will progress their design ideas and create a product specification for a final food product. Students will develop this final idea 24 times and use visual, sensory and taste testing to evaluate the most successful outcomes. Students will apply their knowledge of their researched target audience to ensure they are developing a final product which would suit their needs.

Year 11

This two unit specification requires students to develop their application of knowledge and understanding when developing ideas, planning, producing products and evaluating them. This course has 60% controlled assessment in order to recognise the importance of practical work within this subject.

During term 1 students are focused on their controlled assessment. This builds on their learning from year 10 and culminates in a final product (designed, developed and cooked by the student). Their controlled assessment consists of approximately 15 pages of written study including: research; design; development; and evaluation of food products from different cultures.

During term 2 and 3 students will cover the following theory topics in preparation for the written exam. The functions and properties of food, the nutritional properties of food, standard components, Food production, labelling and packaging and sustainability.
